FILLET OF SUCKLING PIG IN A POTATO CRUST ON CAPONATA WITH BITTER COCOA

INGREDIENTS

• 200 grams fillet of suckling pig
• 300 grams potatoes
• 1 aubergine
• 1 courgette
• 1 red pepper
• 50 grams sugar
• 1/2 glass vinegar
• 10 grams cocoa
• 1/2 onion

THE RECIPE

FILLET OF SUCKLING PIG IN A POTATO CRUST ON CAPONATA WITH BITTER COCOA
After the ingredients, here’s how to prepare it...

PREPARATION

Brown the fillet of suckling pig on all sides, cook it in the oven at 60 degrees for 40 minutes.
Peel the aubergines and dice them; do the same with the courgettes and peppers. Fry all the vegetables and put them in a colander to drain the surplus oil.
In a pan, fry the chopped onion, add the sugar and vinegar and let it reduce a little. Add the cooked vegetables and the cocoa before removing from the heat.
Peel the potatoes. With a mandolin, julienne the potatoes finely, roast them in a non-stick pan with a little oil, shaping them into a pancake once browned on both sides. Place the potatoes on a sheet of baking paper, place the fillet on top and roll the potato around the fillet. Finish cooking in the oven at 180 degrees for 10 minutes 
Put the caponata at the centre of the plate and place the fillet on top and decorate with a sprig of herbs of your choice.
